Let The Count Down Begin

Only 4 days to go until the wedding. Today I am putting the finishing touches on the program. I need one more picture frame to use on the Groom's Table and we will pick up the alcohol on Wednesday and take to Elmwood to refrigerate and have there ready to ice down. But that's it…then it's time to just sit back, relax, and enjoy!

We have had one year to plan this wedding and I must say it has flown by! I can't wait to show you her bridal portraits, they are so beautiful. After the wedding we are renting cabins at a nearby lake with my family to spend some time together for the rest of the weekend. Look for those bridal photos the beginning of next week…

Busy and Emotional Week

I have been too busy to blog. I would not suggest to anyone to plan a wedding during tax season or while building a rent house. I can say with joy that the taxes are done, the wedding plans are almost finished, and after this week the house will be complete!

We spent the weekend packing up Kalli's belongings. They are delivering appliances Tuesday, laying carpet Wednesday, and then we will move the rest of her things over to her new house. I'm so happy for her but yet, so sad. We are VERY close and I have never been away from her more than a weekend. It does help to know she is marrying a wonderful man who treats her like a princess, and the fact that she is only moving like 5 minutes away from me.

Tomorrow, she and I are going to Houston to shop for the MOB (mother of the bride) dress. I really just want something fairly simple, something I can wear again. Oh I have shopped for my outfit but when I go into a store and ask for MOB dresses all I see is something my grandmother would wear, definitely not me :) Wish me luck cause I'm running out of time!

Wedding - Getting Busier by the Day

I really can't complain with the wedding planning. Things have gone smoothly {knocking on wood}. But the closer we get to the wedding date the more busier we are becoming with everything. The wedding invitations have gone out and we are waiting on response cards. The deadline for those is March 10th {only 2 weeks away} and we are still waiting on more than half to respond! I even paid for the return so not sure why they are waiting until the last minute. Soon after the deadline we will finalize everything with Elmwood Gardens, the caterer, and the florist.

Speaking of florist {we met with her on Feb. 1 and just love her to death, oh and she's from California}…who knew fresh flowers could be so expensive! I do have lots of areas with the florist to tweak and save money, also with the caterer, so as of right now I am just a little over my budget.

Sunday, Kalli and I went to Dallas to shop for her bride's maid gifts, and for my wedding attire with not much luck. I am hoping by next month they have a bigger selection of springy outfits. Since it's a garden wedding I think I can get by with something that I can wear again. Kalli had her last dress fitting Monday, and the dress fit perfectly! They are steaming, pressing, ironing it out, and we pick it up March 7th.

This Saturday is Kalli's first bridal shower. The aunts on her side of the family are hosts. We are so excited! I will be too busy to take photos but one of her bride's maids loves to take photos and has taken on the task of doing just that. As soon as I have them from her I will post here.

I have finally finished income taxes for our building contractor business. So happy to have that behind me for another year!

I'm getting ready to go buy my sweethearts their Valentine gifts. Matt is on his way home, so tonight we are going to Tyler for supper and whatever else Kalli wants to do to celebrate her birthday.

Each day we are warming up a little more and Sunday's forecast is lots of sunshine and the high 60's…so excited!

Kalli is 20 today!

It's hard to believe how fast the time has gone, hard to believe my house doesn't have teenagers any more, but only adults. I love this time in their life…transitioning from teens to adulthood, but at the same time I miss them being little.

We will be celebrating her birthday this weekend when Matt gets home from Oklahoma {he has been there for 2 weeks in training} and when her finance Ty can be here to celebrate with us {he is in nursing school and they don't care if it's your finance's birthday, you are not allowed to miss}. Tonight, we will either grill a steak {her favorite meal} or grab a bite some where here local, but this weekend we are going to Tyler to eat some place good and maybe a movie or bowling.

Weekend Welcome

We are having gorgeous weather today with a high of 74, blue skies, lots of sunshine…perfect walking weather and spending time outdoors, which is exactly how I am spending my day {with Bella right by my side}.

I bought groceries this morning and stocked up on fruits and veggies. The wedding is just a little over 2 months away so it's time to get serious about losing a few pounds.

I did take a stroll down the Valentine aisle. I'm easy to please…store bought candy and flowers are fine by me. Dinner and a movie are welcome too!

No real plans for the weekend other than going to my dad's on Sunday to pick up a leather couch and 4 bar stools he is giving to Kalli and Ty. Tomorrow I will help Matt get packed for his trip to Oklahoma for job training for 2 weeks. He leaves on Sunday. Lots of outdoor time if the weather is permitting.

Baby It's {TOO} Cold Outside

We got a little bit of snow on Sunday. Not enough to build a snowman or even play in, but it was pretty falling from the sky! Our temps will drop into the teens tonight. I can't leave my house without my thermals on, and poor Bella's potty outings are short and hurried.

Last Friday night we went to the late movie to see Little Fockers. It was cute and funny, like the others. Saturday, Kalli and I picked up the brides maid dresses from a boutique in Lufkin. They are so pretty and something they can definitely wear again. I have always heard that everybody needs a "little black dress" and now the girls have one ;)

I ordered the invitations last week. Kalli and Ty met with the DJ last week, met with the cake lady today. Things are really coming together and we are getting so excited!

I'm still around, hee hee! We had a wonderful New Year's Eve party with close friends and family. However, we did start a fire with our fireworks, but the guys got it under control quickly and there was no damage or injuries {thank goodness}

My brother and his family went home on Sunday and I started taking my tree down…I should have waited for the tree because that was too much sadness for one day. Family leaving and the realization that Christmas was over for another whole year.

I have no plans this weekend except for a trip to Lufkin to pick up the girls bride's maid dresses. It's supposed to be really cold beginning Sunday and the first part of the week so I think I will go stock up on groceries.

Loving Technology

I haven't had much computer time since Christmas. Our Christmas was wonderful and I got an Ipad from Rudy, a blu-ray player from Matt, and blu-ray movies from Kalli. All I can say is blu-ray + hi def TV = one beautiful picture! I am also loving my Ipad! Even though the screen is small it amazes me how clear the picture is when watching movies. I can't count how many times I have seen "You've Got Mail", but on my Ipad, I am seeing things in the background that I have never seen before!

Besides playing with my new toys we have lots of family home for the holidays and have been spending time with them. Also getting ready for our New Year's Eve bash here at the house. Both my family and Rudy's will be here to ring in the new year. I can't wait!

Christmas Eve, 2010

This morning I am cooking for our family get together with my in-laws. I am making confetti corn, green bean casserole, and a bourbon chocolate pecan pie. Along with that I will take some of the candy Kalli and I made the other day.

Dinner at 5:30, Christmas Eve Service at church at 7 then back to the in-laws for the unwrapping of gifts.

I'm also preparing for our Christmas morning brunch. This year I'm trying a new recipe, a breakfast casserole that you make the day before and then just pop into the oven the next morning. Along with this we will have homemade biscuits with cinnamon butter, baked ham, hash browns, and mimosas for sipping.

Rudy builds a fire in the mornings before he leaves for work and I spend the day keeping it going. {love a fire on cold days}

I had a pretty lazy weekend and enjoyed every minute of it. Saturday morning I took Bella to the groomers. She goes to PetSense and after her appointment we walked around the store and found a few goodies for her. They leave treats out for all the little fur babies to try. Bella loves this, almost as much as going to the bank…they hand out good treats too!

The Christmas Gift

I love holidays, especially Christmas, but this time of year also brings so many demands for our time and attention. As we prepare to celebrate Christmas--and celebrate it we should!--may I urge you to intentionally quiet yourself at some point each day and spend some priceless time contemplating the wonders of the birth of our Lord Jesus Christ.

The essence of Christmas is found in John 3:16, where we read that God loved us so very much that He gave His only Son, Jesus, to be the payment for our sins.

"Thanks be to God for His indescribable gift!" 2 Corinthians 9:15

We spend so much time searching for that special Christmas gift for our friends and loved ones, but have you ever thought about a gift for our heavenly Father? My gift to Him is my time alone with Him, appreciating and giving thanks for "His indescribable gift."

Good Monday Morning

We are having extremely warm weather and I had to turn my AC back on. I was lazy this weekend and only left the house to go to the grocery store yesterday. We watched The Holiday…I love that movie and Killers…so funny!

This morning I have work to pick up. I really don't want to…this is the clinic that only calls me on holidays, but I just can't seem to get the word "no" out of my mouth when they call. I had planned on putting my Christmas tree up today, but it will have to wait until tomorrow or Wednesday.

What we are having for supper…yum!

Cabbage Rolls

1 lb ground round
1 lb sausage
Large cabbage
1 cup rice (uncooked)
1 can sauerkraut, washed and drain well
1 diced onion
Salt and Pepper, to taste

In a large bowl mix together ground round, sausage, rice, sauerkraut, onion, salt and pepper.
Wash and cook cabbage head just long enough to loosen the leaves. Pull off leaves and fill with meat mixture. Roll up and tie with string.

Place in a deep baking pan and add water 1/2 way full. Bake at 400 for about an hour.

Looking Forward…

I am looking forward to tomorrow's weather…high of 72! I'm going to be outside most of the day :) Bella will be with me…playing in the leaves, taking a long walk, and basking in the warm sunshine!

I don't know what has gotten into me, but I have already gotten a good bit of my Christmas shopping done…online shopping that is, and love it! Nothing like being able to shop in your p.j.'s, and a lot of the stores I have shopped at have free shipping right now! I usually don't even start my shopping until after Thanksgiving. I think you can blame it on the cool temps, just puts you in the mood I guess.

Tonight I am meeting my sorority sisters at Giovanni's Italian Restaurant for dinner and conversation…can't wait!

Autumn Days in East Texas

There's Frost On The Pumpkin

I slept in this morning and it felt so good. We had frost on the ground and I just couldn't tear myself away from my warm cozy bed…apparently, Bella couldn't either…she didn't even want to go out to potty, so we snuggled.
For my title of this post…did you're parents/grandparents ever say that when it was really cold outside? My grandmother always said this.
While drinking my coffee this morning I spotted this bird. Not sure what kind it is, but it was in no hurry to leave it's spot, even with me snapping photos and walking all around the tree it was in.

I am feeling much better. Still some cough and congestion but all throat irritations are gone thank goodness. I have just been taking it easy and staying in out of the cold weather but today I am ready to get out of this house. The kids and I are going to Tyler in a bit. I am looking for a nice warm blanket for my dad, a visit to Starbucks and Target, and dinner at Cheddars.

Thanking God for the many blessings He has given me.

New Toy, Rangers, Meatload

Had a wonderful weekend. Kalli and I didn't get home til 9 Saturday night from shopping in Tyler. We had supper at Olive Garden. Our favorite place to go. Sunday I visited with dad and watched the Cowboys game with him. When I returned home Rudy and I took the Ranger {Rudy's new toy} for a ride in the woods.

I so wanted the Rangers to go a little further…at least give the Giants a run for their money, but they just couldn't get it together during the World Series. Still very proud of them for making it there!

We had a storm last night and colder temps came with it…61 for the high today! I love this weather, minus the rain.

For supper last night I made Trisha Yearwood's meatloaf recipe along with a little of my own tweaking. Recipe to follow.

2 pounds lean ground beef, 20 saltine crackers, crumbled, 1 large egg, lightly beaten, 1/4 cup ketchup, 1 tablespoon yellow mustard, 1 teaspoon salt, 1/2 teaspoon pepper, 1 medium onion, finely chopped.

Preheat oven to 350 degrees.

Mix the beef, cracker crumbs, egg, ketchup, mustard, salt, pepper, and onion until well blended. Shape the mixture into two loaves and place side by side in a 9 x 13 pan. Bake for 1 hour, or until they are browned. Transfer to a platter immediately and allow to cool slightly.

My tweaking…1 cup ketchup and 1/2 cup brown sugar mixed together. Spread on top of both loaves the last 10 minutes of baking…yum, yum, yum!

That I love boxes! My favorites are below.

I had the most wonderful time with my family last weekend! Friday night we all met at the street dance that was held after the homecoming game. I not only got to visit with family but lots of friends from high school. Saturday evening after the Peanut Festival we had a BBQ here at the house with lots more visiting!

Sunday, when they left, I was so sad. I am always sad when my family leaves but usually it only lasts for a day. This time it lasted for a couple of days. That's my reason for being so quiet this week.

Time to get supper going so I can watch the Rangers game!

What's Cooking ~ Chicken Marsala Tetrazzini

Ingredients

1 (8-oz.) package vermicelli
2 tablespoons butter
1 (8-oz.) package sliced fresh mushrooms (I used a small jar of sliced mushrooms)
3 ounces finely chopped prosciutto (I used bacon)
3 cups chopped cooked chicken
1 cup frozen baby English peas, thawed
1 (10 3/4-oz.) can reduced-fat cream of mushroom soup
1 (10-oz.) container refrigerated light Alfredo sauce
1/2 cup chicken broth
1/4 cup Marsala
1 cup (4-oz.) shredded Parmesan cheese

Preparation

1. Preheat oven to 350°. Prepare pasta according to package directions. Meanwhile, melt butter in a large skillet over medium-high heat; add mushrooms and prosciutto, and sauté 5 minutes.

2. Stir together mushroom mixture, chicken, next 5 ingredients, and 1/2 cup cheese; stir in pasta. Spoon mixture into a lightly greased 11- x 7-inch baking dish; sprinkle with remaining 1/2 cup cheese.

3. Bake at 350° for 35 minutes or until bubbly.

Total: 45 minutes
Yield: Makes 6 to 8 servings

Spur of The Moment

Rudy and I left Sunday afternoon, spur of the moment kind of trip, for Shreveport, LA. We shopped at Bass Pro then at the Boardwalk. After a couple of hours of shopping we were ready to try our hand at the Eldorado Casino. I came home a winner {nothing to brag about kind of win} Rudy did not do so well. I wish I had taken my camera because out front of Bass Pro Outdoor World they have 2 old trucks decorated with what looks like any and everything they could think of. Really unique looking. I tried to find an online pic to share but this is the best I could do. Looks like we will have to make another trip very soon so I can take pics this time :)

My younger brother and his family are coming in this Friday to spend the weekend. We are going to the homecoming football game and street dance Friday night. Saturday, is the annual Peanut Festival where we grew up, and Saturday evening a BBQ at my dad's. I'm sure lots of washers will be pitched ~ fun times ahead!

The Best of Autumn

The only thing I bought in Canton {besides lots of yummy food} is this beautiful flower pin. It's shown on Kalli's denim jacket, but it looks great on my tan jacket as well.

Saturday evening I had to work at the annual fall fest for my sorority group. We use this money for your Thanksgiving and Christmas projects {usually to help out needy families}. The fall fest is only for 3 hours and we made over $400! That is actually the most we have ever made in such a short time :D

Did the weekend come and go way to fast for you? Mine did! I can't get enough of this beautiful weather we are having. It actually dipped into the 40's last night and we ended out wonderful weekend by making s'mores out on the deck. I forgot my camera dang it, but we will be doing again soon, and I will do my best to remember the camera next time…

Kalli and I are headed to Canton in the morning for the First Monday Trades Day they hold at the beginning of each month. I know I have talked about this place before but in case you have forgotten, people come from all over, even different states to sell their homemade goodies. There is also lots of yummy food to try, not to mention the endless samples provided.

The weather should be perfect...low 55, high 82.

My shopping cart is loaded in the car, now all I need is for tomorrow to hurry up and get here!

Fall Dishes

With the fall-like temps comes fall dishes...I made this honey apple cake today and it was a big hit with the family!

Ingredients

1 cup chopped pecans, divided
2 cups sugar
1 cup vegetable oil
1/4 cup honey
3 large eggs
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
3 cups chopped Golden Delicious apple
Honey Sauce
Vanilla ice cream (optional)

Preparation

Grease and flour a 12-cup Bundt pan; sprinkle bottom of pan with 1/4 cup pecans. Set aside.

Beat sugar, oil, and honey at medium speed with an electric mixer until well blended. Add eggs, 1 at a time, beating just until blended.

Combine flour and next 4 ingredients. Gradually add to sugar mixture, beating at low speed just until blended. Stir in vanilla, remaining 3/4 cup pecans, and apple. Spoon over pecans in pan.

Bake at 350° for 55 to 60 minutes. Cool in pan on a wire rack 15 minutes; remove from pan, and place on a wire rack over wax paper. Pour 1/2 cup Honey Sauce over warm cake. Cool.

Heat remaining Honey Sauce; serve with cake and, if desired, ice cream.

Honey Sauce

Ingredients

1 cup firmly packed brown sugar
1/2 cup butter or margarine
1/4 cup honey
1/4 cup milk

Preparation

Bring all ingredients to a boil in a medium saucepan over medium-high heat, stirring constantly; boil, stirring constantly, 2 minutes.

Yield: Makes 1 1/2 cups

The weather has been perfect in the mornings and evenings to work outside in the yard. I have been cleaning some weeds out of my flower beds and trimming up some plants, also replacing some of my summer plants with fall mums. I also like to add a few pansies but haven't found any that look decent.

We all enjoy the colors of autumn leaves. The changing fall foliage never fails to surprise and delight us. Did you ever wonder how and why a fall leaf changes color? Why a maple leaf turns bright red? Where do the yellows and oranges come from? To answer those questions, we first have to understand what leaves are and what they do.

Leaves are nature's food factories. Plants take water from the ground through their roots. They take a gas called carbon dioxide from the air. Plants use sunlight to turn water and carbon dioxide into oxygen and glucose. Oxygen is a gas in the air that we need to breathe. Glucose is a kind of sugar. Plants use glucose as food for energy and as a building block for growing. The way plants turn water and carbon dioxide into oxygen and sugar is called photosynthesis. That means "putting together with light." A chemical called chlorophyll helps make photosynthesis happen. Chlorophyll is what gives plants their green color.
As summer ends and autumn comes, the days get shorter and shorter. This is how the trees "know" to begin getting ready for winter.

During winter, there is not enough light or water for photosynthesis. The trees will rest, and live off the food they stored during the summer. They begin to shut down their food-making factories. The green chlorophyll disappears from the leaves. As the bright green fades away, we begin to see yellow and orange colors. Small amounts of these colors have been in the leaves all along. We just can't see them in the summer, because they are covered up by the green chlorophyll.

The bright reds and purples we see in leaves are made mostly in the fall. In some trees, like maples, glucose is trapped in the leaves after photosynthesis stops. Sunlight and the cool nights of autumn cause the leaves turn this glucose into a red color. The brown color of trees like oaks is made from wastes left in the leaves.

It is the combination of all these things that make the beautiful fall foliage colors we enjoy each year.

Besides the beautiful colors, one of my favorite things about autumn is the crisp, cool, clean, feel of the air. After the hot stuffy days of summer, I feel like I can breathe again.

Fabulous Weekend

I had a fabulous weekend! Friday, Rudy and I went to Tyler and did a little shopping, well I did a little and he did a lot! I told him he shopped like a girl, then we went to dinner. While I was shopping my dad called my cell and asked if we wanted to come eat lunch with him Saturday, he was cooking a brisket and ribs. Can you believe that in May I thought I was going to lose him, and now he is well enough to live his life outside of just sitting in front of the TV all day due to not being able to breathe and no strength! He is back to driving some, mowing his yard, and some cooking. He still tires out easily, but he's living has his life back to near-normal!!! Sunday, Rudy and I went to walk-through a few houses that are up for auction tomorrow night. One is close by and will make a great rent house and the other is not so close but could easily be fixed up and resold. Wish us luck!

I found this darling lantern at Colonial Candle. What really sold me was the bird on top :) I know my candle is not very pretty and I will replace it with an off white candle when I go shopping. I'm also thinking of using the lantern on the sign-in table at the wedding.

Rudy is taking of early today and we are going to Tyler. He will be shopping for his upcoming hunting trip to Kansas and I will be shopping the sale racks! Dinner to follow at Texas Roadhouse!

Catching Up

Well, here is a little bit of what I have been up to...we have been buying up lots, acres we can divide, and rent houses! I am constantly searching the web for good deals in our area and checking the local newspapers for any listings there. Why are we doing this? Rudy is contemplating a career change to get ready for retirement in the near future. He owns his own business so what he saves is what will be his/our retirement. Pretty much everything we have is paid for with the exception of 3 rent houses that will be paid off in two years. Our rentals already provide a nice income and I have no doubt that with more, we could live on them along with the money we have saved, without having to change our lifestyle. Another new thing with me is that I have pretty much given up my transcription business with the exception to a few local doctors that I work on an as-needed basis only. I am still doing the bookkeeping for the business and with more rent houses coming along I am more busier than I would like to be.

Time to go finish up my supper...

Too Hot in Texas

It has been so hot and I think the heat is getting to me. I have had sinus trouble and sinus headaches all week! Feeling sluggish too. I worked in the yard on Tuesday, mid-morning, and got way too hot. Guess I will have to leave the yard work for Rudy until it cools down some. The older I get the more I am hating Texas summers!

I watched a really good movie last night, "The Boy in the Striped Pajamas", about Jewish prisoners. Very sad, but good.

Since my last post we have booked the D.J. for the wedding, and by the end of this month I should have the caterer. Kalli and her bridesmaids went to Dallas this past weekend and found their dresses. We are definite about the style, just waiting on Kalli to pick a color. She and I are going to Dallas the end of this month to decide between two dresses she has picked out. Actually, she had 6 picked out but has narrowed it down to 2! They will take her measurements and we should have her dress in 3 to 4 months. Some places it takes 6 months to get your dress, so I'm glad we didn't wait until the last minute...I had no idea it could take that long!

New Kitchen Sink

July 4th weekend Rudy and I went to Lowes and purchased a new kitchen sink and faucet. It's black/dark gray granite, scratch and stain resistant. I love it compared to the white sink I replaced it with that I had to clean and scrub constantly. I love to decorate but tend to go overboard at times. Do you think my windowsill is too cluttered? Tell me the truth, you will not hurt my feelings...I REALLY want your opinion!

In the next month we will have Kalli's wedding dress picked out. We have to have it ordered by August, to give them plenty of time to get it made and have it to us for bridal portraits. We shopped in Dallas last Friday and have 4 on hold at different stores in that area, along with the 2 at Brick House Bridal in the Woodlands. We have a few more places to go then she will make a decision.

Change of Plans

We had a change of plans for the 4th. My younger brother that was coming down with his family decided to go to Montana and see my older brother and his family instead. He was coming here in October already so he decided to share some of his time with other family members. I can't say I blame him, since the weather in Montana is so much cooler than here! Most of Rudy's family was out of town this weekend so the kids ended up hanging out with friends most of the 4th. Rudy and I went to Tyler and watched the very funny movie GrownUps. We had dinner at Clear Springs then frozen yogurt from Andy's. We made it home in time to watch the kids set off fireworks (pics below). Last week I snagged this cute desktop calendar from The Shabby Shoppe last week.

New Things

Our last trip to Fredericksburg I picked up these two items that I just love! The chicken and the teapot below.

The teapot is for decorative purposes only, but isn't it pretty?! We are melting here. It's already 86 and only 11:40 AM. Glad I got all of my flowers planted last week when we at least had a nice breeze in the mornings. No breezes now, and all that rain we got a couple of weeks ago made my yard so pretty and green but Rudy had to turn the sprinklers on last night because our grass was starting to wither. Have I mentioned I don't care for Texas in the summer?

Hello Friends

Hellloooooo friends! I am still around, just so busy and no desire to post much =( Kalli and I went wedding dress shopping yesterday and we have 2 dresses on hold that she really likes but she wants to look around some more to be sure. We will have to make a decision by August because they are pre-ordered and it takes 4 to months. Her wedding is exactly 10 months away today! I am excited and sad. I got very emotional yesterday when she walked out of the dressing room, not just once, but every time she walked out in a different dress! I hope I get all the tears out of my system beforehand because I really don't want to be a "basket-case" the day of. I do have to say me and Rudy both adore her fiance, Ty! We are not losing a daughter but gaining a son, a very good one at that! He is a devoted Christian with a good head on his shoulders, and the best part of all, he adores Kalli. They are both young in age, but so mature at heart.

My dad continues to amaze me with his recovery! He is still doing his physical therapy and can't get around by his self yet, but he is breathing good on his own and hardly ever needs his oxygen mask.

My younger brother Kendale and his family will be here July 4th weekend and I am really looking forward to spending time with them. I'm sure we will be at dad's a lot and we are going to a parade and firework display on the 3rd. Cooking out and tubing and jet skiing on the 4th! I'm ready!

Busy May

What a busy month May was with meeting with photographers and caterers, and then my dad going into respiratory distress and had to be life-flighted to East Texas Medical Center in Tyler! Kalli and I were meeting with a photographer in Tyler when I got the call that my dad was in the ER in Crockett, and that I needed to get there as soon as possible. That is a 1 1/2 hour drive from Tyler to Crockett but we rushed out the door and headed that way, then I got another call from the hospital that they were going to life-flight him to Tyler instead because he was in respiratory distress and wasn't breathing on his own. We turned around and headed back to Tyler and stopped by Matthew's work and picked him up and headed to ETMC in Tyler. We saw the care-flight land and walked with them into the ER. I do have to say they were fast getting him into the ICU and his doctor was there waiting on him. The nurses were outstanding on keeping us informed on what was going on and what they were going to do next, and went into great detail with any questions we had. I was very impressed with the way they handled everything in Tyler, now ETMC in Crockett is another story and I want get into that now.

Dad got to come home Saturday, and his caregiver was there to pick him up and bring him home since were in Childress for my nephew's (my brother's son) high school graduation. My brother and his wife threw a party for him on Saturday and we had a great time. Bella had fun playing with Skip, their miniature Border Collie. Sunday we did a little shopping on the way home and Monday, Rudy and I went to visit dad. He is doing great, breathing so much better than he has in a very long time. He is eating well, which he had not been before all of this happened and seems to be in such a good mood now. It is so refreshing to see him like this!

Oh, and the photographer that we were meeting with that Saturday that all of this took place, we have booked her. She is adorable and her work is beautiful. See for yourself here. She also gave us a lead on a great and cheap caterer that we are meeting with soon!

The Wedding Planner

Last Saturday, Kalli and I had an appointment to tour Elmwood Gardens here in Palestine. We have been once before but had forgotten just how beautiful the place is. Sunday, after church we also visited the home of a lady we go to church with who offered her home for the wedding. The kids decided on Elmwood, not only for it's beautiful landscape with lots of flowers, which was the deciding factor for Kalli but also because of the chance of rain in April, they have a beautiful indoors area, which I believe was the deciding factor for Ty. They have also decided on a date, April 15, 2011, at 7 PM.

Next, deciding on a photographer and we have a meeting set up with Lee Loveless Photography, also here in Palestine. There is a few more we are interested in, Krystle Akin Photography, and Crista Couch Photography. Of course there are plenty of others but they are way out of our price range. Who knew there were so many photographers to choose from!

How do you like my title? That is what I'm feeling like these days, but I must say, it has been fun so far. I could really have fun doing this if I were spending someone elses' money!

Texas Hill Country Fun

Rudy and I had a wonderful time in Fredericksburg last weekend! We shopped, ate, wine tasted, ate some more, shopped some more, and wine tasted a lot! Two of my favorite wineries to visit there are Becker Vineyards and Grape Creek Vineyards. Click on the names to see how beautiful they are. I have pictures of them but my pictures are not as vivid and clear as those on their site.

Fredericksburg, founded by German settlers in 1846, is located in the heart of the Texas Hill Country and as some of you already know, Kaudelka is a German name. Rudy's grandparents were full German. He loves that he can eat all the German food his heart desires when we go. I on the other hand prefer his mother's cooking! Even though she isn't German her mother-in-law taught her how to cook before she passed.

Another favorite place of mine right outside of Fredericksburg is the Wildseed Farm. They have expanded since we were there last and now have a Butterfly Haus, Brewbonnet Biergarten and a deli. You can spend a whole day here, which we did! After touring pretty much the whole place we sat outside by the band and had a glass of wine (me) and beer. Spring Has Sprung

If you didn't see my last post, check it out for our exciting news! I have been spending lots of time outside working in the yard. This past weekend I purchased a Japanese Maple tree. Who knew there would be so many different kind of maple trees to choose from. This is called Emperor.

I filled one of my whiskey barrels that sits on my deck with three different kinds of hostas, caladiums, impatients, and ferns. I think they will do well since this is a fairly shaded area they are in.

My all-time favorite...the bougainvillea plant. It comes in several different colors but my fave are white and hot pink.

I am trying my hand at these snowball daisies. I have never had these before, so time will tell.

My daughter, Kalli is engaged! Her boyfriend Ty proposed to her Thursday night! They are thinking of April 2011 for the wedding.

Her daddy and I are both thrilled for them! He is a God-loving man and they have grown so close to the Lord together. I couldn't ask for a better son-in-law.

Great Week, Lovely Weather

What a great week it has been and lovely weather, as well! I have completely finished all of mine and Rudy's income taxes and so relieved to have that behind me! Monday night I made cabbage rolls for supper and everyone was here so after eating and cleaning up the kitchen we played Farkle. Tuesday was the same but this time I made a new recipe called bacon and cheese topped chicken. It is definitely a keeper!

1/2 cup Dijon mustard
1/2 cup honey
4-1/2 tsp canola oil, divided
1/2 tsp lemon juice
4 boneless skinless chicken breast halves
1/4 tsp salt
1/8 tsp pepper
Dash paprika
2 cups sliced fresh mushrooms
2 tbl butter
1 cup (4 oz) shredded Monterey Jack cheese
1 cup (4 0z) shredded cheddar cheese
8 bacon strips, partially cooked
2 tsp minced fresh parsley (optional)

1. In a small bowl, combine the mustard, honey, 1-1/2 tsp oil and lemon juice. Pour 1/2 cup into a large resealable plastic bag; add the chicken. Seal the bag and turn to coat; refrigerate for 2 hours. Cover and refrigerate the remaining marinade.

2. Drain and discard the marinade from chicken. In a large skillet over medium heat, brown the chicken in remaining oil on all sides. Sprinkle with salt, pepper, and paprika. Transfer to a greased 11 x 7 baking dish.

3. In the same skillet, saute mushrooms in butter until tender. Spoon reserved marinade over chicken. Top with cheeses and mushrooms. Place bacon strips on top. Bake, uncovered, at 375degrees for 20-25 minutes or until a meat thermometer reads 170 degrees. Sprinkle with parsley.

There was 5 of us so I easily doubled the recipe.

Tonight we are going to try out the Asian City restaurant. I have heard it's really good!

Fun Weekend

Had a fun, fun weekend! Friday evening me, Rudy, Kalli and Ty drove to Leona (an hour drive) and ate at Leona General Store. We had grilled steaks, salad, twice baked potatoes, and the most delicious rolls I have ever tasted. The food was delicious and of course I didn't stop there...I had peach cobbler with ice cream for dessert, yummy! Saturday, Kalli and I went to Tyler shopping. I found a few shirts for Matt and I got two outfits for church. Kalli didn't find anything which is very surprising. We had lunch at McAlister's Deli. For dinner we had leftover dumplings that I had made Thursday night then we watched Public Enemies with the whole family. Great movie! Sunday morning we went to church then had lunch with some friends/family from church. After church Rudy and Matt went fishing. I wanted to go but I decided to just let the guys go this time and have some male bonding. Matt was off this whole weekend, the first for him since he started February 16th. He loves his job by the way, even with the long hours and only one day off on the weekends usually. Kalli is loving her job too! It's weird, cause they live here but I hardly ever see them with the schedules they keep. Kalli is off of school this week for spring break but she is working everyday. I will get to see her at night though. Wishing you a wonderful Monday!

Hello, Friday!

Dad has made a surprisingly recovery and was let out of the hospital yesterday morning! Remember, they had originally said he would be in the hospital for 3 to 4 weeks after the surgery! He can still use your prayers for continued healing, also that he keeps his promise this time and stays off the cigarettes.

Sunday evening I came home with a scratchy throat and cough and figured it was my allergies. Monday I still didn't feel well and the cough was worse but I figured if I kept on my allergy meds I would be better the next day. By Tuesday evening I was having chills and fever and it had moved into my chest. I went to the doctor on Wednesday to find out I had bronchitis. He gave me a strong dose of antibiotic, nasal spray and and inhaler. I am feeling better today, not 100%, but better. I can't even walk long distances without getting short of breath and my chest starts hurting. I'm so ready to be well again so I can go visit my daddy!

Matt started his new job Tuesday and is working 12 hour shifts. He leaves the house at 5:30 AM every morning and doesn't get in until around 8 PM. He is loving it though and he is single so he can handle those hours. Kalli is loving her job too at the Electric company. Since working and going to school she has found a new appreciation to being off on Saturdays. Of course, she is off on Sundays too, but she does have to get up early for church.

All of my family has gone back home now. I miss them so much. My younger brother did mention trying to get back down here after his son Cody graduates in May. I hope so!

My dad came through surgery just fine! He will be in ICU for a couple of days. They said he would probably be in the hospital 3 to 4 weeks recovering from this because of his age and unhealthy state. Our preacher came to the hospital yesterday and everyone in the waiting room joined hands and we prayed for my dad along with their loved ones too. It was beautiful!!! Thank you Lord!

We got 2 inches of snow yesterday! At times, it was really coming down hard and was so pretty. I just sat in the windowsill in the waiting room looking at the snow and praying/meditating for my daddy. I had felt very emotional beforehand but when I started praying I felt so calm and peaceful. I could feel the Lord their with me.

I'm off to the hospital in just a bit. I am way behind on blog visits but I haven't forgot about you my friends.

A Lot Has Happened

A lot has happened since my last post. Matt got his job! He took his drug test today and sent off all of his paperwork. He should be working by the 22nd of this month if not sooner. Kalli also got a job working at the Houston County Electric Coop in Crockett. Crockett is about 30 minutes from where we live and is where my dad lives and where we go to church. She is doing clerical work, Monday, Wednesday, and Friday, and has college on Tuesday, Wednesday night and Thursday. She is one busy girl!

When I took my dad in for the results of his lung CT scan they told us the tumor they are watching on his lung had not changed any but they did find an abdominal aortic aneurysm and with another CT scan they confirmed it's size at an 8. They get concerned with them at only a 5! He is having surgery this coming Thursday in Tyler. With his already unhealthy state of his lungs, heart and body they said he has a 50/50 chance of surviving the surgery. If they do nothing they give him less than a year to live. He is choosing surgery. It's a very risky surgery and a long recovery, so please keep him in prayer.

My older brother that lives in Montana came in last Tuesday to spend sometime with the family and to be here for the surgery. He has been staying with us and we have had a great time talking about our younger years. I don't know how many times we have said..."remember when"... My younger brother and his family will be here Wednesday evening. I have rooms booked about a block from the hospital and we will be there Wednesday, Thursday, and possibly Friday. I will update you on the surgery as soon as I can! Prayers please!!!

Spring In January!

I am loving this beautiful spring-like weather we have been having! I took Bella out yesterday for a walk and the sun on my skin felt so good. After this post we are going to get another walk in before the rain comes tomorrow. I have been working on Rudy's income tax stuff and I'm just about finished with his, then I need to start getting everything together for our rental property. My work has slowed again and I haven't even had time to look for more work right now with the tax stuff, and just trying to keep on top of things with the business. His has picked up a lot, which is a good thing!

Matt still has not heard anything from Baker-Hughes as to whether he got the job or not. It has only been a week and they did say it would bet 1 to 2 weeks. We still run to the mailbox everyday with great hopes that "the" letter will be there! Keep him in prayer please.

Will try to make visits this weekend and get caught up with all of you!

Holiday Fun

I haven't fallen off the face of the earth, in case you were wondering. We had a wonderful Christmas, going to my mother and father-in-laws Christmas Eve for an early dinner then to church for Christmas Eve service. When we came out of the church it was snowing, very lightly, but snow is snow to me! We headed back to the in-laws to exchange gifts and then games afterwards. We didn't get home until after midnight. Christmas morning I was up before anyone and put the coffee on. Shortly afterwards, Rudy was up, then the kids. Matt and Kalli had their stockings then we cooked breakfast. After breakfast we did our gifts. I have pictures to share as soon as Kalli sends them to me. I may just add them to flickr instead of my posts, but I will let you know when they are ready for viewing. In the afternoon we went to my dad's to take him Christmas dinner and his presents and stayed and visited for quite a while. That evening we went to see It's Complicated. I have never been to the movies on Christmas and was surprised at how many people were there! It's a really funny and cute movie! Another movie I have watched lately that is really good is Julie and Julia.

My younger brother and his family came in last night from Childress. They said it snowed on them all the way here until about Ennis (this side of Dallas) and took them a little longer than usual, but the good thing is they arrived safely! They will be here until Sunday. We are all getting together this evening at my dad's then tomorrow night they are all coming here for a New Year's celebration. On the menu: Grilled steaks, salad, mushrooms, baked potato, and red velvet cake for dessert. I will also have a few snack foods...chips and dip, and a cheese ball and crackers. Rudy and my brother Kendale are going to build a fire outside and we will have horseshoes and washers to pitch and then more games inside. Fireworks at midnight!

It's Beginning...

To look a lot like Christmas! Oh my, I can't believe it's been a week since my last post! I have been busy decorating. Our sorority Christmas party is this coming Monday, here at my house. I have the groceries bought for everything I am going to make and the house is completely decorated, so now all I have to do is clean house, which I am doing today. I will make my rum cake on Sunday, so that just leaves my lasagna, a new pasta dish with penne and spinach, green salad, and garlic bread to do on Monday.

Baby, It's Cold Outside

I started this post Wednesday but my computer shut down and I lost it. I had lots of trouble with my computer that day but deleted some stuff I had downloaded for work and now it's working again. I'm hoping that was all it was. We had a 50% chance of snow today but I only saw a few flakes, and I do mean a few! We are at 27 degrees right now!

I just recently started collecting Old World Christmas ornaments. They are a bit pricey so I buy one each year.

O Christmas Tree

My tree is up and decorated. I love this time of year! Everything about it...the shopping, decorating, cold weather, a fire in the fireplace, Christmas movies and music, baking, wrapping gifts, and spending time with family! The most important of them all is the reason why we celebrate Christmas. To celebrate the birth of Jesus.

I decorated the top of my tree a little different this year. I used the same big bow but added poinsettias, feathers, gold twigs, and berries. It's a little busy but I'm pleased with it.

The Day After

Hope everyone is coming out of their turkey coma! I was so proud of myself...I have been cutting back on my sweets and eating smaller portions for about a month now and did really well yesterday. It helps when the meal is not at your home so you don't have all of the leftovers tempting you. We had a wonderful day spent with Rudy's family and my dad. I also got to talk to both of my brothers and my younger brother and his family will be here a few days after Christmas so I'm looking forward to seeing them!

I have just a little bit of work to finish from my pickup on Wednesday then Kalli and I are going to see New Moon. She has already seen it, but said she doesn't mind seeing it again. After that I'm decorating my tree. Hopefully, I will have pics of my tree in my next post. Have a blessed day and weekend!

Not A Good Day

If something could go wrong today it has! I picked up work this morning and when I started working on it I noticed that my medical spellchecker was not working. I then realized that it must have got deleted when they wiped my hard drive clean. I have the disk so that was no problem, but it's not compatible with Word 2007. I was using Word 2003 before the computer problems but didn't have the CD to reload it so they put Word 2007 on here. So I ended up having to order a newer version of the medical spellchecker. Also, all of my autocorrect entries were with the 2003 version so I lost those too and had to reenter them. I use the autocorrect for shortcuts like for instance when I type actsx, it automatically expands to active, active-assisted, and passive range of motion. This saves me lots of time and keystrokes. I'm so hoping tomorrow is a better day!

I had the chance to go see New Moon tonight with Kalli and her BF, but I was to drained from the day to go. I guess I will see it on DVD.

I am delivering and picking up work in the a.m. and giving Bella a much needed bath in the p.m. I also have a few ingredients I need to get for the dishes I am taking to my inlaws for Thanksgiving. I need to return blog visits! Oh, and I need to make me a much needed hair appointment!

Time Flies

I have been intending to post but my days get away from me and then I say I will post the next day and then the same thing happens! I've had work to pick up this week and will work Monday, Tuesday, and Wednesday of next week. This is just to fill in for vacation time. On the days I finished work early I have been studying for my certification. I was hoping to try to take the exam the end of January, but there is a lot to cover so not sure that will happen. That is pretty much all I have done this week. We did get to eat at Little Mexico, Tuesday evening. This is one of our favorite Mexican food places, but they had a fire in their kitchen about 6 months ago and just now reopening. The place was packed and we waited over an hour for a table, but it was so worth it!

Kalli is going to try to get us tickets to see New Moon tonight or at least some time this weekend. Hope you have a wonderful weekend!

I took a couple of night shots of the finished rock project. Please excuse the leaves but I don't clean them up until they have all fallen. I can't wait to get some shrubs planted back and of course I will take more pics when I have done that.

Friday, Kalli and I went to the annual Mistletoe and Magic in Tyler. People from as far as Seattle, Washington were there selling their stuff. A lady from Texas makes these cute little collars and I got Bella a camouflage one and one for Christmas.

After Mistletoe & Magic we dined at Olive Garden on salad and breadsticks! It was so good! Sunday we went to church and then to lunch with friends afterwards. We haven't joined the new church in Crockett yet, but we are surely enjoying it. I leave there filling so full of the Holy Spirit and it is what helps me make it through the week.

Tonight is sorority with my sisters! We are bringing can goods to donate to the Stockpot which is a place for people to go to get a good meal who cannot afford to buy one for themselves.

I did get a couple of shots of the rock but they left their scaffolding up so these are not real good shots but I wanted to show you what was going on. I am going to add them to Flickr so if you want to see them bigger go here. I am liking it much better now that the mortar is dry.

I think I am going to pick up supper from Subway tonight and have it while I'm watching the CMA Awards. Kalli will be home later but she said she would probably eat at her boyfriends. I will be out of pocket tomorrow...taking my dad for his pulmonary appointment in Tyler and then we are going to dine at Texas Roadhouse before coming home.

I'm hoping to have a picture to share with you soon of my rock. They started on Monday and actually got a lot done today but I would like to show you a pic after the mortar has dried some, because right now I really don't like it, it's way too dark. Rudy assures me it will fade to the color I was wanting. My guys are still in Kansas hunting. Matt said he saw a monster of a buck but he wouldn't come close enough to him to get a good shot. He said he was so big he was a bit shaken up!

Not much going on here. I took Bella to the groomers today. She is always so tired when she comes from there. I think it's because she is so nervous and it just wears her down. She smells good though and looks so cute. Sorry but I'm too lazy to take a picture of her, lol! I haven't cooked since the guys left last Thursday so Kalli made spaghetti for lunch today. I guess she was tired of eating out or trying to find something quick and simple. It sure tasted good!

Well, hopefully, I will have a more exciting post Thursday or Friday, and maybe even some pictures to share. Until then...

Loving Autumn

I love Autumn! Actually, I love all seasons but it's Autumn time now and I am savoring the crisp cool morning and early afternoon air, and when we are lucky, we get a whole day of crisp and cool! The leaves on the trees are doing their thing and the colors are magnificent. I didn't get any mums planted this year but this one below is from last year. I kept it trimmed and well watered during the summer and this is the result!

The view from my driveway is starting to look pretty spectacular.

We're Gonna Rock!

Hopefully, after next week, my house remodel will be complete. The guys are coming Monday to lay my rock. I had to get up at 5:30 this morning so I would be wide awake when they got here at 6 to go over what Rudy and I are wanting, since he is leaving today for another hunting trip in Kansas. Below is a photo of the same rock that will be laid on my house. This isn't my house, just one I found with the same rock and similar brick. Below that, is a closer up photo. My windows will also be framed with brick but we are not doing that crown looking thing at the very top of the window because I don't have enough room for that on my house. Anyway, this will give you some idea of what's to come. I'm so excited to get this completed!!

Noticing that... it really is the little things that matter the most in life.

Pondering these words... Now faith is being sure of what we hope for and certain of what we do not see. Hebrews 11:1 NIV...I have faith, do you?

From the kitchen... I have water boiling for tea.

Around the house... Need to put my Halloween decorations away and decorate for fall. I have lots of laundry to do after being away for the weekend.

My New Blog - Smiles and Blessings

I'm just playing around with Blogger, waiting on Rudy to get home from deer hunting so we can eat dinner. It's 7:40 and I'm starving. I am really like the ease of blogger, plus it's free, and there are so many blogger skins to decorate with, that are also free. Oh, did I mention I love the name I picked out, "Smiles and Blessings".

Doesn't this picture just make you smile? This is Bella, my Yorkie, who will be 1 year old next month! She is always the center of attention in our family, so much personality, she loves and plays hard and then sleeps hard. If you are looking for a sweet-natured pet, a Yorkie is your best bet! She doesn't meet a stranger - she loves everyone! Which really isn't good at all because if someone were to steal her she would go along with them happily. I don't want to think about anything ever happening to her like that, it makes me so sad.
